Budget friendly, Simple Strawberry Cobbler

This simple and delicious strawberry cobbler was experimentation tonight, with a bag of frozen strawberries from my freezer (Dollar Tree find!). I researched various cobbler recipe ideas from the internet and created a simpler approach to making this dessert from basic ingredients.

Please excuse the picture; I decided to show you the finished dessert when it had been brought out of the oven. One of the things I noticed is that the breading was spread out into various areas. This is ok though, less breading = less calories! The strawberry cobbler is a little similar to the peach cobbler I make occasionally. It's breading is a cake-like texture, you want to be careful not to overcook the cobbler.

I tried to substitute some of the ingredients to lesson the fat and calories in the dish. One ingredient that I wanted to substitute is the sugar for Splenda. However, I didn’t have any Splenda in the pantry at this time. An added plus about this dessert? It's quite budget friendly!

Another thought came to mind after viewing, and tasting this dessert. I will be adding more strawberry mixture to my next cobbler, or using a smaller baking dish. Possibly add brown sugar to the top of the cobbler before baking as I do with my peach cobbler.

This would be a perfect fit with whipped topping, or vanilla ice cream. We enjoyed this dessert by itself.

Simple Strawberry Cobbler

1 Bag Frozen or 3-4 C. Fresh Strawberries
1 ½ Cup Sugar
1 ¼ C. Self Rising Flour
½-¾ C. 1% Milk
1 Stick Light Butter
Vanilla Extract according to taste preferences

Preheat oven to 350.

In small pan, melt stick of butter.

While butter is melting, combine the self rising flour, and ½ cup sugar in a mixing bowl, slowly add milk until the mixture is semi-runny. Add a tablespoon of vanilla extract into the mixture and mix well.

Pour melted butter into 9x13 baking dish, and then pour the flour mixture on top of the butter. Some of the melted butter will seep over the top of the flour mixture, this is ok.

In the pan that you used for butter, pour the strawberries and 1 cup of sugar. Heat until the sugar is melted and the mixture becomes saucy. Add vanilla extract according to your preferences. Simmer for about 10 minutes.

Pour the strawberry mixture over the flour mixture in the baking dish. Bake until the flour mixture rises and browns.

Let cobbler cool and enjoy!

It was good and so easy to make. I think if I broke down the costs, it would be less than $3 to make since most of the ingredients are staples found in most pantries. The frozen strawberries were only $1 at the Dollar tree.
